I am thinking of surprising my sister a new countertop for her new kitchen. What will be the best one to use? I've seen somewhere about a Labradorite. will this work or anyone here has a good alternative?

Agree with @joooow labradorite is gorgeous but it's more like a showpiece. If your sister is practical, quartz or granite will be more fitting.

I think it's more of a luxury stone, and not always the most practical, it can scratch and chip a bit easier than granite or quartz, plus it's pricey.

Gemstones used as countertops include amethyst, quartz, agate, jasper, and malachite, often in slab or composite form.

It is possible to use gemstones such as amethyst, quartz, agate, and jasper as luxurious counter tops. These stones offer vibrant colors, durability, and a stunning, high-end aesthetic for kitchens and bathrooms.
